Course Summary

Gain the skills needed to enter into the catering industry with this comprehensive course, suitable for beginners.

Learn culinary skills and techniques from professionals in our industry-standard preparation kitchens. Students learn how to create and prepare menus using a range of produce and creative skills.

This two-year course provides additional time to achieve a Level 2 in English and/or Maths, with additional trips, activities, and employer engagement activities.

Course Details

Develop industry-specific knowledge and lifelong skills vital for the professional cooking industry.

You will cover:

  • The structure of professional kitchens
  • Preparing healthy meals
  • Menu planning and cost calculations
  • The principles of working as a professional chef
  • How knives, tools, and equipment are used in professional kitchens
  • Food safety
  • Health and safety in catering

As you learn in our professional kitchen environment, you take part in projects throughout the course, which give you the opportunity to work with top chefs.

How will it be delivered and assessed?

For these qualifications you will complete practical demonstrations/synoptic exams, assignments and take a multiple choice examination as well as completing short answer questions for the practical units that you undertake.

Your next steps...

Once you finish your course, you will be ready to start in an entry-level position in the catering industry. You can also go onto further study in this area, such as a Level 3 qualification, or an Apprenticeship.
